A year ago, I was frequently raving about avocado as an ingredient in cakes/muffins- that is soo 2013 guys. Now it’s all about the sweet potato! Yes, it sounds odd, but trust me, it works (hubby can confirm this!).

A Tea Loaf fit for an Earl (Grey)


Both myself and my darling fianc√© are both tea-addicts, we drink it throughout the day, everyday. We literally have a cupboard full of all kinds of varieties: both tea-bags and loose leaf… green, black, spiced… you get the point! Carlos is particularly partial to a cup of Earl Grey. Earlier today we were sat leisurely in one of our favourite cafes, each enjoying a great cuppa (mine a Masala Chai, his an Earl Grey)… when I suddenly had a light-bulb moment… Carlos’ ¬†favourite tea IN a cake! Douffins…12 quirky little hybrids

Now for perhaps one of my most popular baking ventures yet… wittily named ‘The Douffin’ by my man. It is what I refer to as a Doughnut-muffin hybrid. These naughty-but-nice little fellows resemble doughnuts with their sugar coating, and oh-so-satisfying ooze of jam when bitten into… however have a more muffin-like texture, although lighter. They are also baked in a muffin tray, rather than deep-fried like a doughnut (thus arguably a healthier option? ;-p). Continue reading
